I fall in love with smell and taste of Kolkata style biryani and it is a sub-variant of Lucknowi style. The specialty of kolkata biryani is potato. The chicken is soft, tender, succulent with long grained basamati rice.
I make chicken biryani for my friends and keep them tummy happy.
Ingredients and spices that need to be Take to make Kolkata Style Chicken Biryani :-:
- To make biryani spice :-
- 4 Green cardamom
- 2 Black cardamom
- 5 Cloves
- 1 inch Cinnamon
- 1 floret Mace
- 1/2 Nutmeg
- 1 piece Star anise
- 1 tsp Black peppercorn
- 1 tsp Fennel seeds
- 1 tsp Cumin seeds
- leaf Bay
- 1 tbsp Caraway seeds
- To marinate Chicken :-
- 500 grams Chicken
- 1 cup Hung curd
- 2 tbsp Ginger-garlic paste
- 2 tbsp Coriander leaves+mint leaves+green chilli paste
- 2 big sized - Fried onions
- 1 piece Lemon juice
- 1 tbsp Cumin powder
- 1 tbsp Coriander powder
- 1 tsp Kashmiri red mirch powder
- Salt as per taste
- 4 tsp Mustard oil
- To make rice :-
- 2 cups Basamati rice
- 1 Bay leaf
- 2 Green cardamom
- 4 Cloves
- 1 inch Cinnamon
- Salt as per taste
- 1/2 bowl Mustard oil
- To make biryani :-
- 1 pinch Saffron
- 1 cup Warm liquid milk
- 4 tbsp Fried onion
- 1 tbsp Lemon juice
- 1 tsp Rose water
- 1 tsp Keora water
- 1 drop Mitha atar
- 2 tbsp Ghee
- 3 medium sized - Fried potatoes
Instructions to make to make Kolkata Style Chicken Biryani :-
- Marinate chicken overnight in a bowl.
- Dry roast all the biryani spices separately and make a powder, that is called Biryani masala.
- Wash and clean the rice and soak for 1 hour.
- Boil water.
- Add mustard oil,salt, bay leaf, Cinnamon, green cardamom, cloves in it.
- Add Basamati rice.
- Cook until rice is half done.
- Separate whole garam masala and bay leaf with sieve.
- Drain water and spread the rice on flat surface.
- Soak the saffron strands in warm milk and keep aside for 1 hour.
- Take a large handi and arrange the rice, marinated chicken and fried potatoes in layers separated by ghee and saffron milk.
- Sprinkle rose water, keora water, biryani masala, lemon juice on it.
- Cover the air tight lid.
- Cook it for about 1 hour in low flame.

- Once done transfer to the serving plates.
